Almond studded banana cake

For some time now, I have been contemplating baking a cake with something other than butter. I became lactose intolerant about a year ago so it has been a little difficult in trying to find something else I can use in place of butter and not worry too much about how it might taste. Well I was in luck today because the blue outfit came out and with the red cape was flying very strongly in the wind, out came the sunflower butter in my fridge. Followed by bananas and nuts and this ‘n’ that and as a result this is what poured out in my flow, Almond studded banana cake. Here is the very best and simple base for the banana cake I used and always use now. I hope you’ll like this very light and melt in the mouth but crunchy beauty. Bon weekend! 🙂

For the cake mixture, you’ll need:

  • 170 g sunflower butter / beurre de tournesol
  • 190 g black sugar / sucre noir
  • 280 g self raising flour / farine à gateaux
  • 2 eggs / oeufs
  • 3 bananas / bananes

For the almond studs you’ll need:

  • 100 g raw almonds / amandes crues
  • ½ tsp cinnamon / cannelle
  • ½ tsp ginger /gingembre
  • ¼ tsp nutmeg / noix de muscade
  • 1 tsp sugar / sucre
  • knob of butter / petit morceau de beurre
  •  Some banana coins / pièces des bananes
To begin:
  • Put all the ingredients for the almond studs in a bowl, mix together and set aside.
  • Cream butter and sugar until light and fluffy,
  • Add the eggs, one at a time and mix thoroughly,
  • Stir in the mashed bananas and fold the flour gently into this mixture but making sure not to overwork the batter. That is, lumps are perfect.
  • Pour into your buttered 9” tin and sprinkle on the already prepared spicy  nuts (as in the picture) pressing lightly to stick to the batter,
  • Decorate with the banana coins and push these halfway down into the dough,
  • Bake in a 180 degrees preheated oven for 40 mins or until a knife comes out clean when inserted into it,
  • Leave to cool completely in the tin and turn it out,
  • Enjoy

    • Thanks guys :-). You know, I was thinking the same too and thought maybe I should hold back a little, but then I thought, what the heck! Just get it out there Aijay and don’t stand in the way of the flow. And you know she, Baking, loves you. One just has to work a little to get to know her and in time, she reveals all of herself to you :-). Goodmorning hugs coming right at you both.
