Sunshine Salad

This came up one evening as I was still crashing at my sister’s flat while searching for flats. We decided to invite a friend over for dinner and learn some new chants at the same time. So I thought to make something for the occasion. I just pulled all the ingredients from the fridge and this beautiful one came into being. It made me and my sister smile and I hope it does the same for you. Enjoy 🙂

Sunshine Salad

You’ll need the following for 3 people:

  • 3 leaves of Lamb lettuce (thinly sliced)
  • 9 Cherry tomatoes (sliced on half)
  • 3 medium carrots (grated)
  • Corn on the cob (cooked for 5mins)
  • 3 eggs (cooked how you like it)
  • Mixed salad of watercress, spinach, rocket
  • Red and Orange bell peppers (1 of each roasted for 10mins on 180 degrees oven)

To make:

  • Lay the Watercress, spinach and rocket first on the plate
  • Add the sliced lamb lettuce
  • Top with grated carrot
  • Place the tomato halves on the sides of the plate
  • Throw in the roasted peppers
  • Then scatter the corn seeds on top of the mixture
  • And finally place the eggs lovingly on your plate
  • Enjoy with your favorite dressing 🙂

Ps: I had mine with honey , mustard, balsamic dressing and it was fab!
