Plain and simple Lemon ‘n’ Almond cake (Dairy-free)

It may be plain, it may be simple but it’s ohh so delicious.

We’re moving houses and so looking to use up bits and bobs we’ve got lying around. So I’ve devised a plan, I’m just gonna go on a baking spree and advertise out there if anyone wants a cake, they can pop by our place and get some! That way, I get to bake! you get fed and I use up all the stuff in our kitchen! Win win? Mais Oui! 🙂

Yesterday, it was this Lemon and Almond cake! The Goddess Nigella sorted me out for this recipe and I modified it a little because I made it dairy-free. As opposed to butter, dairy-free spread has got some water in it so i tend to increase my dry ingredients just a little otherwise it can be too soggy.

Hii guys, I hope you’re all well. For the past weekend, I stayed at my teachers place for some yoga living, loving, satsang and kirtan. ‘Twas magical! and for the gathering, I was flicking through a cookbook (Rose Elliot’s Complete Vegetarian) in the kitchen and found this recipe and decided to make it. So yesterday I decided make these yummies again but differently by baking it instead of frying incorporating some strong flavours with red onions, coconut cream and the strong thyme that is sure to wake your tastebuds with warmth at the first bite. Hot almond tomato sauce

I had this yesterday with rice and let’s just say I was very happy. My moon cycle is coming and this month it’s all about ‘zee spice :-). I wanted it spicy and I wanted it quick and here it is my friends. This one packs a deep spicy bunch with 2 scotch bonnet chilli’s. If you’re not as crazy as me on the chilli front then you’re more than welcome to use half a bonnet, skip it all together or replacing with normal ground black pepper instead. Almond sauce with African sass :-)

This one is a quickie yummy treat and the best thing about it is that you can slather it on almost anything and it’ll make ’em taste yumm-yumm. You’ll need to roast some of the veggies which might take a bit ‘o’ time but believe me it is well worth it because the taste it gives to the sauce is second to none. All the roasting can be done in your frying pan if you don’t want the hassle of turning on your oven. I actually prefer it this way as the tomatoes get a slight burnt colour that translates into a ‘smokey-bbq-ewy’ taste. Go on, give it a go. Continue reading

Apple ‘n’ Almond Cake

Felt cake-ey with meself so decided to whip up something aromatic, moist and nutty. I had apples at the back of the fridge looking neglected and giving up on me. So I decided to nurture these lovelies and bring out the best in them. The texture and smell of this super fruit together with cinnamon and roasted ground almonds is a thing from heaven. It becomes orgasmic if you can wait and have it the next day as the flavours meld together giving it that depth in flavour. Mmmmmmmmm
