Pain d’Epices or Spicy gingerbread cake (Dairy-free)

We had a family gathering yesterday with food, music and the much Love in the air, You know when you think, if I get any more relaxed now, I’m gonna melt…this was like that. For the gathering, I came along with this yummy number.

‘Twas originally supposed to be a carrot cake until I had a look in the fridge to find the carrots had gone bad. So I brought out a whole bunch of cake ingredients from the cupboard and asked google what to do with lots of ginger. I came upon the great Nigel Slater’s recipe and it just hit me in the head with inspiration. But for this diary-free version with date syrup, gingerbread spices, orange soaked sultanas, less sugar and still lots and lots of ginger, read on.

Not-your-ordinary cream cheese frosting on a Carrot Cake

IMG_3277‘Twas about 2 weeks ago when Ben and I had to go away on a weekend course, and so we were looking for someone to look after our baby.

After much searching and a little panic, my sweet Lord brought us lady Rebecca. We didn’t know each other much but she saw a post I had put in Facebook and contacted me saying she wanted to help. I felt an awful lot of gratitude for this woman. Moreso because when I went in to see her, she had a 6 month old baby on hip!! and a 2 year old running about and still she was like, ‘yeah, I’ll be fine, just bring her!”. You know when you meet these people that make you think they could easily mother the whole world and still be kool. That’s what I felt with her.

So we got to talking and I said, I need to offer you something for this m’lady and after, “ohh noo, don’t worry about it, you don’t have to”, we found out she likes cakes! And my heart went..Oooooo yah!!!! So carrot cake it was and when I was making this I thought she’ll probably think I’ll show up with a cake in a standard loaf tin but ohh boy was she in for a surprise!
So this one is dedicated to m’lady Rebecca for just being superb and a God-send.

Indian spiced mini scones (diary-free)

As promised, here it the second mini yum yum I made for the women last Saturday. My sister made these on her birthday, they looked soo yummy that I ate some of it and thoroughly enjoyed them. My stomach on the other hand told me off after that so I asked her for the recipe so I can make one I can eat without a grumpy tummy to contend with. I’ve changed the original recipe from above to make it dairy-free. Also a little note to say that I put these in the freezer after step 6 below because I wanted it to be fresh for the women in morning. I just popped in the oven on the day and added 10 more minutes to the baking time and it was superb. So just incase you want have it fresh for whoever you’re making them for or for yourself, know you can do the same and it’ll still taste delish! Continue reading

In the spirit of all things spicy fuelled from the fact that I still have apples in my kitchen, this crazy idea was inevitable when I had a friend over for dinner and found myself staring at these juicy ladies. It turned out to be a complete hit with my cheesecake lover friend and he even went as far as putting this one on the list of top 2 favourite cheesecake….still couldn’t make up his mind which was number one but first two in his whole 39 yrs is FAB enough for me :-).

Hot almond tomato sauce

I had this yesterday with rice and let’s just say I was very happy. My moon cycle is coming and this month it’s all about ‘zee spice :-). I wanted it spicy and I wanted it quick and here it is my friends. This one packs a deep spicy bunch with 2 scotch bonnet chilli’s. If you’re not as crazy as me on the chilli front then you’re more than welcome to use half a bonnet, skip it all together or replacing with normal ground black pepper instead.
